I couldn't include this recipe with the Gingerbread recipes, because these cookies have no ginger...but they are very crisp, spicey cookies that taste like gingerbread...

Solstice Spice Cookies

  • 1/2 C honey

  • 1/2 C sugar

  • 1/2 C butter (1 stick)

  • 2 1/2 C flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/8 tsp cloves

  • Optional red hots, raisins, or frosting
    1. Boil the honey and sugar together until the sugar melts. Stir in the butter. Cool to room temperature.

    2. In a large bowl, stir together the dry ingredients and spices.

    3. Stir in the cooled honey mixute and knead until throughly mixed. Do Not chill dough

    4. Roll on a lightly floured surface to 1/8" thick. Cut with cookie cutters. [If you wish to use the cookies as decorations on your Yule tree, make a hole at the top with a straw or toothpick before baking.]

    5. Bake at 350 for 6-8 minutes. Allow to cool on cookie sheet about a minute before transfering to wire rack. Decorate as desired.

      Good with a glass of milk or coffee, these are definitely "dunking" cookies. (Cookies get VERY hard after a few days and will need a good soak before you attempt to eat them--they can be softened by enclosing them in an air-tight container with an apple or a piece of bread.)
