| Solstice Spice Cookies
1/2 C honey
1/2 C sugar
1/2 C butter (1 stick)
2 1/2 C flour
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp cloves
Optional red hots, raisins, or frosting
- Boil the honey and sugar together until the sugar melts. Stir in the butter. Cool to room temperature.
- In a large bowl, stir together the dry ingredients and spices.
- Stir in the cooled honey mixute and knead until throughly mixed. Do Not chill dough
- Roll on a lightly floured surface to 1/8" thick. Cut with cookie cutters. [If you wish to use the cookies as decorations on your Yule tree, make a hole at the top with a straw or toothpick before baking.]
- Bake at 350 for 6-8 minutes. Allow to cool on cookie sheet about a minute before transfering to wire rack. Decorate as desired.
Good with a glass of milk or coffee, these are definitely "dunking" cookies. (Cookies get VERY hard after a few days and will need a good soak before you attempt to eat them--they can be softened by enclosing them in an air-tight container with an apple or a piece of bread.)
